1 pound Thin Spaghetti
3 cups Chicken Stock, store bought is fine
2 cups Michelada Love
1 cup Red Enchilada Sauce, canned is fine
2 Tablespoons Olive Oil
Place noodles into pot. Hold noddles and twist so they fit into the pot like in the pic. Easier than it sounds.
Pour remaining ingredients into pot.
Cover pot and pressure cook for 4 minute.
Quick release and remove the lid.
Do not dump out any liquid, it all stays in the pot.
Use long tongs to mix cooked pasta into the sauce.
You can serve immediately or let sit on warm to absorb more flavor.
Sprinkle with cheese and serve.
Serves 4 or 5 hungry people.
Note:
Perfect for once a week ”meal prep” as it reheats nicely in the microwave.
